Let’s start with my favorite slow cooker winter dinner recipe and then look at other ideas that are all SO yummy!
First, Cowgirl Soup – the “I really cooked” way – and the LAZY oh-so-EASY way!
Crockpot Cowgirl Soup

It’s a combo type of soup that combines that creamy heartiness of hamburger soup with the little bit of tang of a taco soup.
So very good and – yep, it’s “souper” simple to make!
I have TWO recipe variations for my Cowgirl Soup:
The “I really cooked” way…
and the LAZY way.
Lazy Cowgirl Soup Recipe
If you like recipes the “lazy” cowgirl way (like I do)….
Here’s the easiest way to make my Cowgirl soup, with the same great taste as the “more effort” way you’ll see later… the lazy DUMP way!
Here’s what you need:
One pound of this✅ See It Herecooked with this✅ See It Herea can of this✅ See It Here2 cups of this✅ See It Here1 can of this (drained)✅ See It Here1 can of this (drained)✅ See It Here1 can of this UNdrained✅ See It Here
Directions:
– Brown the meat and use the taco seasoning as directed.
– Dump the seasoned meat and everything else in your crockpot.
– Turn crockpot on.
– Cook on HIGH 4 hours or LOW for 6.
– Done!
Top with grated cheese, sour cream, tortilla chips… whatever you want!
Classic Cowgirl Soup Recipe:
Now, if you want to put (a little) more effort into making this soup, try this recipe variation.
Here’s what you’ll need from the store:
1 pound cooked✅ See It Here1 can drained✅ See It Here1 can drained✅ See It Here1 can drained✅ See It Here3 1/2 cups✅ See It Here1 chopped✅ See It Here1 chopped✅ See It Here3 cloves minced✅ See It Here1 seedless diced✅ See It Here1 8-oz bag✅ See It Here
Now that you have your main ingredients, get out your slow cooker…
Directions:
– Dump cooked meat, beef broth, corn, beans, tomatoes, onion, pepper, garlic and jalapeno in your crockpot (ie, everything above BUT the cheese).
– Season with some chili pepper, a little bit of red pepper flakes and a pinch of salt.
– Mix it all together and cook on HIGH for 4 hours (or LOW for 8 hours)
– When cook time is done, mix 1 cup of milk with about 3 tablespoons of flour and pour that mixture in your crock to thicken it up.
– Stir then pour in your cheese with a quick stir again.
– Pop that lid back on and let cook about a half hour or so.
– Done!
