If you’re anything like me, weeknight dinners can sometimes feel like a race against the clock (and a REAL strain on the budget – ugh!).

That lead me to try and figure out some cheap easy dinners with chicken that I can make in a snap… and the fam will actually eat (which is NO easy chore ’round here haha!)

Below are five incredibly easy chicken recipes that are not only delicious but also quick to whip up!

Whether you’ need a simple one-pan meal or craving some zesty tacos, you’ll find something here to please your taste buds and save you time in the kitchen.

One Pan Chicken and Vegetables

One Pan Chicken and Vegetables

Ingredients:
– 4 boneless, skinless chicken breasts
– 2 cups mixed vegetables (like bell peppers, zucchini, and carrots)
– 2 tablespoons olive oil
– Salt and pepper to taste
– 1 teaspoon garlic powder (optional)
– 1 teaspoon Italian seasoning (optional)

Instructions:
1. Preheat the oven to 400°F (200°C).

2. In a large bowl, toss the chicken breasts and mixed vegetables with olive oil, salt, pepper, garlic powder, and Italian seasoning.

3. Transfer to a baking dish and spread out evenly.

4. Bake for 25-30 minutes or until chicken is cooked through and vegetables are tender.

Instructions:
1. Heat oil in a large skillet or wok over medium-high heat.
